Goat Cheese Salad

Ingredients

  • 3 cups of romaine lettuce and mixed greens
  • ½ cup black olives
  • ¼ cup purple onion (diced)
  • 1 tomato (diced)
  • 1 tablespoon cilantro
  • 1 cup purple cabbage (diced)
  • 1 cucumber (cubed)
  • ½ cup pecans (chopped)
  • 2-3 tablespoons goat cheese
  • ¼ large avocado (diced)

Directions

Toss and mix all ingredients and lightly sprinkle with raspberry vinaigrette dressing.
