Salmon, Pepper and Asparagus Bundle Bites

Ingredients

  • 1 lb. asparagus spears
  • 1 tablespoon olive oil
  • ¼ teaspoon sea salt
  • 1 garlic clove, minced
  • 1⁄8 teaspoon paprika
  • 1 small yellow bell pepper
  • 1 small red bell pepper
  • 4 oz. smoked salmon
  • Pinch of cayenne pepper, optional

Directions

Preheat oven to 425°F. Snap the ends off of the asparagus spears. Toss with olive oil, sea salt, minced garlic, paprika and cayenne pepper. Put on baking sheet. Cut bell peppers into fry shapes. Put on baking sheet with asparagus. Transfer to preheated oven and roast for 10 minutes. Stir, then roast another 10 minutes. Remove from oven and let cool slightly. Group the asparagus into about 3-4 spears and add a few bell pepper slices with the asparagus spears. Turn oven to broil. Wrap the bundles with a piece of smoked salmon. Put on baking sheet and broil for 2-3 minutes. Enjoy!
